Cold Brew and Coconut Chia Pudding

Infused with coconut, this energizing coffee and chia pudding makes a great grab-and-go breakfast or snack.

What you need

1/4 cup coconut milk
1/4 cup chia seeds
2 tbsp maple syrup
2 tsp coconut oil, melted
1/4 cup coconut flakes, toasted

How to prepare


  1. Stir together coffee, coconut milk, chia seeds, maple syrup and coconut oil. Cover and refrigerate for at least 8 hours or overnight.
  2. Spoon into serving dishes. Top with toasted coconut.



Instead of maple syrup, substitute honey or agave to taste.
