Smoked Sea Salt Float

This fresh take on the traditional ice cream float serves up a delightful mix of sweet and salty.

What you need

227 g Cold Brew concentrate
2 scoops vanilla gelato (or ice cream)
2 tbsp smoked sea salt and vanilla syrup (see recipe below)
Sparkling water
Smoked sea salt for garnish
4000 ml filtered water
1 piece of cheesecloth for filter
1 cup sugar
1 cup water
1 vanilla bean, scraped
1 Pinch of smoked sea salt

How to prepare


Cold Brew Concentrate:

  1. Cover the top of a large mason jar with the cheesecloth.
  2. Pour ground coffee into the cheesecloth so it’s suspended in the jar.
  3. Fill jar with water so coffee is submerged. Put top on jar and steep at room temperature for 12 hours, then strain.
  4. Can store in an airtight jar in the fridge for up to 5 days.

Smoked Sea Salt and Vanilla Syrup

  1. Split the vanilla bean lengthwise, scrape the seeds using the edge of a knife, then add both the bean and the seeds to the saucepan.
  2. Add in all other ingredients over medium heat and cook until sugar dissolves and mixture comes to a boil. Remove from heat and let cool completely.
  3. Pour into a glass and store at room temperature.

Smoked Sea Salt Coffee Float

  1. a tall glass, combine syrup and cold brew concentrate and stir.
  2. Add gelato to taste, then top off with sparkling water and a sprinkle of sea salt.
  3. Serve and enjoy!



If vanilla beans are not available, substitute 1 tbsp. (15 mL) vanilla extract.
